Turns out the Web has lots of info on fasting. I haven't yet found any scientific studies, but the following reference--which appears to be part of some New-Age-like health site--has more general info than most people will want:

Bill Bright, founder of Campus Crusade for Christ (and deceased as of 2003), fasted 40 days every year since 1994. His fasts were not on plain water but on juices.
Nothing I've seen so far suggests that fasting might lead to hallucination or any other serious mental problem. This is good, otherwise there'd be a tendency to dismiss certain teachings about or of Moses, Elijah and Jesus.
The site referred to above says that some people experience "strong emotional reactions" that can readily be dealt with through meditation. Several sites talk about personal cleansing and an increase in mental acuity from fasting.
