In addition to the practical aspects of a large, old universe (already noted by George), it points to God's power and creativity. He is interested in the rest of creation as well, though humans have a unique place. In fact, it has been suggested that the 7 day format of Genesis 1 is intended to counter the impression of being insignificant specks in God's view.
