My opinion is that you can get a pretty good idea of what creation was like before the fall by taking a look around.   My take on this is that the effects of the fall are pretty minimal, and that creation now is pretty much as it was then.

We were supposed to be stewards of this creation.  Our fallen nature has corrupted our ability to be stewards.  Part of that is environmental degradation from our activities.  But, I think a more theologically important part of this alteration in our relationship with creation, (created by the change in our relationship with God,) is our inability to mitigate effects of natural "evil" to both us and to creation.  In otherwords, bad things happen to people, but if our relationship with God and creation was as it is supposed to be, these events would be minimized. 

As to the future of creation.  I dont think there is any thing in scripture that tells us anything about the physical nature of the eschaton.  So anything we would say about this is speculation.
