I can imagine it would be quite a complex history-- many cultures, with
many different ideas.

The commentary by Old Testament scholar Bruce Waltke is very good and
emphasizes the literary structure of the passages. Bruce K. Waltke,
2001, Genesis: A Commentary, Zondervan.

Also, there is a long article in the most recent issue of the
Christian Scholar's Review on the hermeneutics of the Genesis
creation account. Daniel C. Harlow, 2008, "Creation according to
Genesis: Literary genre, cultural context, theological truth":
