With all due respect, you aren't the first person to do a lot of research on early Genesis & there are highly competent Christian scholars from whose extensive work we can benefit. Claus Westermann, e.g., in his Genesis 1-11 (Augsburg, 1984) (the 1st of a 3 volume commentary on Genesis) points out (p.276) an intersting fact. In all the recitations of the acts of God in history which we find in the OT, there is absolutely no mention of the story of Adam & Eve in Genesis 2-3. This ought at least to make us think seriously about whether Israel thought about Adam & Eve as historical figures in the same way that they thought about Abraham, Jacob or Moses.

The question that should be asked is how much historicity there is in Genesis, not how much we need to put into it.
And, of course, that is the question I have put over twenty years into. Those who haven't invested that amount of time on this issue can either take my word for it or do their own research.
