What is definitely new about the thorns and thistles in the curse of Genesis 3 is that they are now weeds, i.e., plants growing where you don't want them.
There are a wide assortment of thorn-associated insects (mimics, etc.) that would also have to be part of an extra round of creation if thorns are a new element of creation. In turn, this contradicts the premise that new species can't be forming after the end of Genesis 1.
