I've read a number of quotes, particularly by Stephen Gould, talking
about how evolution is an undirected process, that if we replayed the
tape things would happen very differently, etc.

Richard Dawkins at the start of "The Blind Watchmaker" says that Darwin
made it possible to be an "intellectually fulfilled" atheist, to have a
plausible alternative to the existence of God.

However I've never seen anyone say that evolution "proves" any of the
things you list above. The attitude is more that evolution renders God
unnecessary to explain the complexity of life, and hence, by Occam's
Razor, God can be assumed to not exist.
